5 Quick Recipes Every Eggetarian Would Want A Bite Of

Eggs. One hero ingredient, oh-so-many recipes! Cooking with eggs is one of the first things you learn (or just figure it out) as an amateur. It’s one of those items that you can literally convert from breakfast to lunch, from dinner to a simple, yet tasty snack.

For some people, eggs are the only thing they can cook. Like literally! And that’s when you need to be a lot more innovative. Just a boiled egg will not always cut it.

For those who love their eggs a little too much, here are 5 egg recipes that will make your eggetarian experience a lot more tantalising!

1. Egg Chaat

This is a wonderful take on desi street food. Amp up your regular chaat cravings with some egg!

Ingredients:

  • 3-4 boiled eggs
  • 1 tablespoon of ketchup
  • 1 teaspoon of chilly sauce
  • 3 teaspoon tamarind pulp
  • 1 teaspoon lemon juice
  • 1 teaspoon roasted cumin
  • 1 green chilly
  • 1 chopped spring onion
  • 2-3 tablespoon of boondi
  • Salt to taste

Method:

Mix the tomato ketchup, chilly sauce, tamarind pulp, lemon juice, cumin, green chilly, and salt, until the ingredients blend really well.

Take the boiled eggs and cut them in half and apply the mixed chutney paste over each. Garnish with spring onions, garam masala, and boodi. And voila! Your tasty snack is done in just 20 minutes!

2. Scotch Eggs

Go full on English with the classic Scotch Eggs that are super easy to make. Leave your french fries aside as this will be your new favourite.

Ingredients:

  • 10 large eggs
  • 8 chicken/pork sausages
  • ½ a bunch of chives
  • ½ a bunch of flat-leaf parsley
  • 1 nutmeg
  • 1 tablespoon of mustard
  • plain flour
  • 150 g fresh breadcrumbs
  • 2 litres vegetable oil

Method:

Boil eight eggs for about 3-4 minutes and transfer into a bowl of cold water. Peel the shells off carefully. Next squeeze out the meat from the sausages and add the finely chopped herb leaves, along with the grated nutmeg, mustard, and a pinch of sea salt and pepper.

Mix it all together and mold it into eight balls. Beat the two extra eggs for coating and keep it aside. Have breadcrumbs ready in one plate and flour in another.

Coat your hands with flour and then flatten the sausage balls into an oval shape. Roll the boiled egg in the flour and place it in the middle of the patty, gently shaping the meat to fit the egg. Take the meat-wrapped egg in the flour, shake off the excess powder, dip into the beaten egg, and coat it in the breadcrumbs.

Deep fry the mold in oil and wait for a minute till it’s sizzling brown. Place on a kitchen towel to soak excess oil and serve with pickles! Yummy.

3. Creamy Deviled Eggs

Just because it’s a fancy hors d’oeuvres, doesn’t mean you cannot give it a try at home. I mean, deviled eggs is like the best snack an eggetarian can ask for!

Ingredients:

  • 8 large eggs
  • 1/3 cup of mayonnaise
  • 1 tablespoon of mustard
  • 1 teaspoon of white-wine vinegar
  • 1 tablespoon minced onions
  • 1/4 teaspoon hot sauce
  • Coarse salt and ground pepper
  • Chilly powder or Paprika

Method:

Boil the eggs in a medium-sized sauce pan and let it stand in water for about 13-15 minutes. Drain the hot water and cool down the eggs in cold water.

In a medium bowl, mix the mayonnaise with mustard, vinegar, onions, and hot sauce. Peel the eggs and remove them from their shell — halve them lengthwise and remove the yolks, keeping the white intact.

Add the yolks into the mayo mixture, and season with salt and pepper. Mash the mix till it becomes a smooth paste.

4. Microwaved Scrambled Eggs

What is one of the first things you ever learn to cook? Well, it’s scrambled eggs. A quick and easy way for busy people to scramble their eggs, this recipe is the answer to all your queries!

Ingredients:

  • 2 Eggs
  • 2 tablespoons of milk
  • 2 tablespoons of Cheddar cheese
  • 1 tablespoon of chopped tomato
  • 1 teaspoon of chopped chilies
  • Pinch of salt and pepper

Method:

Whisk the eggs together with the milk, cheese, tomato, chillies, salt, and pepper. Take a mug and coat it with a little bit of cooking oil. Pour in the mixture.

Microwave the mixture on high for 30 seconds and pause. Stir the mixture and microwave for another 70 to 80 seconds. Once the eggs are puffy, it’s set!

 5. Microwave McMuffin

You know the famous McMuffin? Well, now you too can make it in the comfort of your home.

Ingredients:

  • 5 tablespoons of all purpose flour
  • ¼ teaspoon of baking powder
  • ⅛ teaspoon of baking soda*
  • ⅛ teaspoon of salt
  • 2 tablespoons of milk
  • 2 teaspoons of vegetable oil or melted butter
  • 1 egg
  • 1 tablespoon of grated cheddar cheese
  • 1 tablespoon of chopped spring onions

Method:

In a microwavable mug, mix flour, baking powder, soda, and salt. Add in the milk, oil, egg, cheese, and spring onions and blend it all together. Make a hole in the centre of the mixture, and crack an egg into the centre.

Spoon the batter from the sides and pour it over the top of the egg. Place it in the microwave for 50-70 seconds. You’ll know that it’s ready when the top is firm. Serve hot, and dig in.
