5 Easy Father’s Day Brunch Recipes For Beginners!

Let me tell you, there’s no better feeling than cooking a delicious meal from scratch for the one you love. Watching my family dig into a fresh labour of love is something that gives me SO much joy. So what better way to show your old man you care than whipping him up something special on Father’s Day? Look no further as I delve into my favourite brunch recipes. And don’t worry, you don’t need to be the next MasterChef contestant to get them right.

1. The Fluffiest Buttermilk Pancakes

It’s like eating a delicious cloud!

Ingredients:

* Makes 8 mutant pancakes or 10 large pancakes

Method:

  1. Measure 1 ¼ cup milk in a bowl, add 2 ½ tbs white vinegar to it and a tiny pinch of salt. Stir and let it sit for 15 minutes. The milk should curdle (that’s buttermilk right there). Don’t worry, it’ll taste fabulous.
  2. After 15 minutes, preheat a nonstick pan over medium heat.
  3. Combine all of the remaining ingredients with buttermilk and mix until smooth.
  4. Pour the batter by spoonfuls into the hot pan, forming 5-inch circles.
  5. When the edges appear to harden, flip the pancakes. They should be golden brown.
  6. Cook pancakes on the other side for the same amount of time, until golden brown.
  7. You can top the pancakes with butter, maple syrup, honey, mango, ice cream, or Nutella. It’s a great base for all kinds of flavours.

2. Breakfast Pizza

Ingredients:

* Serves 4 very hungry people, or feeds up to 6.

Method:

  1. Preheat your oven or OTG to 232 degrees centegrate for 15 minutes
  2. If you have a pizza stone, place it on the oven rack to warm. Generously dust the surface of a baking sheet with semolina (aka rawa or sooji).
  3. (Optional) If you’re using sausage, heat a large pan over medium-high heat, add the sausage, and pan-fry until crisp. Put the sausage on a plate lined with paper towels, let it cool, and then cut into bite-size pieces.
  4. Place the pizza dough on the semolina. Drizzle a bit of olive oil over the dough and, using your fingers, brush the dough evenly with the oil. Top with cherry tomatoes (or substitute of choice).
  5. Sprinkle ¼ of the measured Parmesan over the dough, followed by a few slices of mozzarella. Top with caramalized onions, and sausages. Crack 1 egg over the top and season with salt, pepper and herbs to taste.
  6. Bake the pizza for 8 to 14 minutes, checking on it after 5 minutes and rotating it if necessary to ensure that it is baking evenly. When the crust is golden, the cheese melted, and the egg yolks cooked to medium, carefully transfer the pizza to a cutting board. Let it cool for 2 minutes and sprinkle with chives and spring onions. Slice and serve immediately.

3. Huevos Rancheros

A Mexican breakfast staple that’s easy to make. All you have to do is a bit of shopping in advance.

Ingredients:

* Serves 4

Method:

  1. Prepare the salsa: Set a grater in a large bowl; grate the tomatoes and onion into it. Add the jalapeno, chopped garlic, hot sauce, cumin, and salt and pepper to taste.
  2. Heat a medium skillet over low heat and add 2 teaspoons olive oil. Fry the salsa in the oil until it thickens slightly for 3 minutes. Remove to a bowl and set aside.
  3. Add the boiled beans to the same pan along with the smashed garlic, 1/2 cup warm water and a pinch of salt; cook over low heat until warmed through, smashing slightly with a fork.
  4. Meanwhile, heat the remaining 2 tablespoons of oil in another skillet. Fry the eggs sunny-side up; season with pepper.
  5. Place 1 warm tortilla on each plate. Divide the beans among them, then top with a fried egg, some salsa and cheese. Sprinkle with coriander and serve with the remaining salsa.

4. Affogato

Why not replace papa’s tradional cuppa coffee with this Italian dessert?

Ingredients:

* Serves 2

Method:

  1. Make espresso, as per usual. This can also be replaced with French press coffee. Don’t worry, we won’t tell anyone if you use instant coffee (mix 2 teaspoon of instant coffee with 1 cup boiling water and portion it into mugs). Ensure that this mixture is piping hot.
  2. Add a scoop of ice cream to the hot coffee, and top with cinnamon and chocolate!

5. Scrambled Eggs

There’s a reason why classics are so well-loved!

Ingredients:

* Serves 1

Method:

  1. Heat a non-stick pan, add butter and 1 teaspoon of oil to avoid browning.
  2. Cut the button mushrooms into half-inch thick slices and saute. Season with salt and pepper and mixed herbs.
  3. Cook in the pan for 7 minutes, then set aside.
  4. Break eggs into a stainless-steel bowl and beat until well-blended.
  5. Season with a pinch of salt and pepper. You could also add herbs.
  6. Add 1 1 ⁄2 tablespoons of milk or cream.
  7. Heat butter in a small nonstick pan.
  8. When the butter is just hot enough to make a drop of water sizzle, pour in the eggs.
  9. Cook over low heat, stirring gently from time to time as the eggs come together. Lift portions of cooked eggs so the uncooked eggs can run underneath. Whatever you do, DO NOT let the eggs brown.
  10. When eggs are set but still soft and moist, remove from heat and immediately plate.
  11. Garnish with mushrooms and a sprig of coriander.
